Grilled Lyonnais sausage with pistachio, green bean salad & tarragon-flavored potatoes
"Colinky" squash Lyon-style, with sucrine heart
The blue lobster is arranged in the middle of the plate, on a watercress pudding. The lobster sauce emulsion is poured around the pieces of lobster. A few herbs are sprinkled on top of the dish.
Pintade chicken filet, spinach & Katsuno-Tofu tart, morels cream & green asparagus
Traditional homemade pork blood sausage with apples, cut into 3 thick slices topped with sauce and small pieces of apples. Mashed potatoes are also placed between the slices of sausage. The sauce is being poured from a spoon held above the dish.
Tenderly grilled beef flank steak served with homemade dauphine potatoes stuffed with blue cheese.
Roasted fig and steamed raspberries, black sesame ice cream
The warm "Grand Cru Araguani" chocolate mousse is placed in the center of a bowl. Pistachio bits are sprinkled on top of the mousse, and in the middle lies a cacao nib and buckwheat tuile. The pistachio ice cream is hidden at the center of the chocolate mousse.
The rum baba is cut in half, and rum is poured over the inside of the cake. A generous quenelle of light pastry cream is placed next to the baba.

The bar counter, made of traditional wood and tin, is typical of Lyon's bouchons at the restaurant Lugdunum Bouchon Lyonnais. The Chef

As a passionate and accomplished chef, Christophe wanted to honor his hometown, Lyon, by creating the first authentic Lyonnais bouchon, run by a Lyonnais, in Japan. Lugdunum Bouchon Lyonnais came to life in the authentic and historic Kagurazaka district in September 2007.
